This sounds bizarre but try it anyway

Portabello mushroom caps. Drizzle lots of fresh lime juice (as in out of a lime!) into the bowls. Microwave one minute.

Separately, pre-steam as many eggplant slices, bout half inch in width, and diameter as close as possible to match the portabello caps as they will be going on top. Steam these in the microwave for four minutes with liberal drops of Worcertershire. (I can't spell it. Mental block. Sorry.)

Cover the portabello insides with Mrs. Dash Jamaican Citrus. Top with eggplant. Re-douse with lime juice, fresh. Add tomato slices on top. Cover with non-fat cheddar cheese, shredded. Microwave till cheese melts.

This sounds bizarre, but it's really good!

Sorry I've been away... both classes have now started so just getting in the swing. Promise I will do better!

Eggplant would not be appreciated in our house. Might zucchini work? Or, if not, another suggestion? MoMR :-)

P.S. Just change the 2nd R to an S!! Say it kinda like WER ches ter, that'll help.

Generally sounds good but non-fat cheese would not be appreciated in our house...too cruel anywhere (Macbeth). Isn't non-fat cheese like the things they use to discuss in undergraduate philosophy "meat-eating cow"? (I forget what he point was). I put in the reference because it's too short to recognize as a quotation.

I'm new to CR and still roaming the web and library. I've been doing a low carb and lower
calorie regime for 20 months and have lost 66# to date. I remember reading about CR some years back but never did more than read. Perhaps this time . . . :) Just wanted to say, your recipe sounds delicious,I plan to try it within the next couple of days, so thank you!
